Artificial Intelligence and Coffee: AI-conic, Kaffa Roastery’s Innovative Blend, is born

An artisanal coffee roastery in Helsinki, Kaffa Roastery, recently unveiled a coffee blend developed thanks to AI. The new product, called AI-conic, uniquely blends tradition and technology, representing an interesting example of how AI can be applied in the food industry.

In Finland, the country with the highest per capita coffee consumption in the world-about 12 kilograms per person per year-this novelty has caught the attention of enthusiasts. A collaboration between Kaffa Roastery and the local AI consulting firm, Elev, has resulted in a blend that promises to satisfy the most discerning palates.

The AI-conic blend is the result of an innovative process in which artificial intelligence models were trained with detailed synthetic data on the various coffee qualities available. The goal was clear: to come up with a combination of flavors that would challenge traditional blends while maintaining a harmonious balance between the different organoleptic characteristics.

The final blend includes four types of beans: the Fazenda Pinhal from Brazil, known for its smoothness, accompanied by varieties from Colombia, Ethiopia, and Guatemala. This choice, different from the common use of two or three varieties, proved successful after numerous test roasts and blind tastings.

Svante Hampf, director and founder of Kaffa Roastery, unveiled the blend during a festival in Helsinki, explaining how artificial intelligence played a crucial role in the creation of AI-conic. The AI analyzed the characteristics of different coffee varieties and proposed a new and exciting combination, without the need for further human adjustments after the initial trial.

The approach used by Kaffa Roastery not only shows the potential of AI in creating food products, but also offers new taste experiences to consumers. This blend represents a significant step forward for coffee professionals, who can explore new possibilities by combining tradition with emerging technologies.
